Amma’s Dwaraka Special Chicken Fry

Dwaraka is a restaurant in my native, their specialty is a chicken fry called “Dwaraka Special”. Every visit to this restaurant isn’t complete without having this dish.

My mom has a wonderful palette… like a master chef; she can guess almost every ingredient in a dish.

One fine Sunday… reproduced this “Dwaraka Special “and it tasted absolutely delicious! So here I am sharing Mom’s recipe for the chicken fry!

  1. 250 grams chicken
  2. Salt to taste
  3. 1/8 tsp turmeric
  4. 10 cloves of garlic
  5. 2 inch ginger
  6. 1 medium size onion
  7. 1 small tomato
  8. 1 inch cinnamon
  9. 4 cloves
  10. 1 tbsp red chili powder
  11. ½ tsp coriander powder
  12. ¼ saunf
  13. 5 tbsp oil

Marinate the chicken with salt and turmeric and keep aside for 30 minutes. Grind giner, garlic, cloves, cinnamon, saunf, onion and tomato to a smooth paste.

Heat oil in a normal pan (not non stick) , fry the chicken pieces in the oil for 3-4 minutes. Add in the masala paste, chili and coriander powders. Stir and fry on very low flame till the masala almost dries out (approximately 15-20 minutes) keep stirring every couple of minutes to avoid chicken from sticking to the pan.

serve with steaming hot Rasam n rice.
