Rava Laddu


Yesterday I suddenly started craving for some Rava Laddus at 10:30 in the night. The hubby was trying hard to find out a store that will be open at that time… no luck. So those Rava Laddus were written at the top of the to-do list for the next day. After consulting few friends, I realized I dint have fresh coconut. Duly dispatched the hubby to acquire the so said coconuts and was all set to make the much craved Rava Laddus. An hour and half later, I had a plateful of Rava Laddus ready and I was mindlessly hogging on them!

So here’s how I made it

2 cups of semolina / Rava

1 cup freshly grated coconut

1 ¼ cups caster sugar

1/3 cup + 1 tsp. desi ghee / clarified butter

¼ cup warm milk

5 cardamoms crushed

20 cashew nuts (broken into small pieces)

10 raisins

Heat 1 tsp. ghee in a pan; add the broken cashews and raisins. Fry till the cashews turn golden brown, remove from heat and keep aside.

Mix the semolina and grated coconut in a bowl, keep aside.

In the same pan, heat 1/3 cup ghee. Add in the semolina and grated coconut, fry till the semolina turns slightly golden brown (Approximately 10 minutes) . Keep stirring to enable even browning of the semolina. Now add in the caster sugar and stir for another 10 minutes. Turn off the heat, add the cardamom, milk, cashews and raisins, mix thoroughly. Let the mixture cool for about 30-40 minutes

Apply a little ghee to your palms to avoid the mixture from sticking to your hands. Make them into balls approximately medium lemon sized, let them  sit for 30 minutes and serve with Tea or as a dessert.

Notes : These will keep for 4-5 days when kept under refrigeration. Bring them to room temperature before serving.
