Cranberry orange white chocolate biscotti


My friend recently went on a trip to t USA. I asked her to get be dried ber which are sold at a bomb here in India. She said she wud try to get them as all websites are giving a delivery day way beyond her travel date. After she returned to India, she called me a told “Come n take ur berries” I was on cloud nine… I finally can bake with berries wow!

Went to her home the other day, had loads of fun with her 1.5 yrs old daughter… while leaving she loaded my hands with the berries! yay!

As oranges are in season, I wanted to bake with oranges. There was huge slab of cooking chocolate lying in the fridge from a long time.. so I planned to bake this biscotti…

1. 2 cups of all purpose flour

2. 3/4 cups of melted butter

3. 3/4 cups of caster sugar

4. 1 tsp baking powder

5. 1/2 tsp salt

6. Zest of one large orange

7. Juice of half of an orange

8. 2 eggs

9. 1 tsp vanilla extract

10. 1/2 cup dried cranberries, roughly chopped.

11. 3/4 cups of white chocolate chips.

Preheat the oven to 180 degrees C.

In a bowl, mix the flour, sugar, salt, baking powder and whisk to well to distribute the baking powder evenly.

Now add in the cranberries, orange zest, chocolate chips and mix well. Now add in the butter,eggs,vanilla and orange juice and mix well. Line a baking sheet with parchment paper. Divide the dough into 2 parts and make a log( 15 cm long and 4 cm wide ) out of each one, place at least 5 inches apart on the baking sheet. Bake them for 20-25 minutes at 180 degrees c. take out of the oven, let them cool for 25 minutes. Cut the logs into 1/2 inch pieces using a serrated knife.place them cut side up on a baking sheet and bake at 180 degrees for another 25 minutes. Serve with a cup of coffee!
