Red pepper and mozzarella pizza

This really was an effort to make the husband a happy man! he always wants something spicy. Anything not spicy is “not food” for him, so pizza, pasta in a restaurant are not up to his “Spice” levels . Being that typical Andhra guy, that just is like second nature. To make him happy, I made a pizza that he wud love. yes! and I found a way to his heart. Not the stomach u guys! its the chilies 😉

1 whole wheat pizza base (store bought)

¾ cup roasted red pepper pizza sauce

1 ball of mozzarella, sliced

10 Fresh basil leaves

2 tbsp. evoo

Roasted red pepper Pizza sauce (Makes 1- 1 ¼ cups of sauce )

1 large red bell pepper roasted on a grill till charred. Cool peel and chop finely.

1 large onion, finely chopped

4 green chilies (adjust according to heat tolerance)

4 medium tomatoes, finely chopped

4 cloves of garlic crushed and finely chopped

3 tbsp. evoo


Heat oil in a pan; add in the chopped garlic, sauté till golden brown. Add in the onions and sauté till translucent. Now add in the salt, roasted peppers and chopped tomatoes. Cover and cook till the tomatoes turn mushy. Let cool and stick in a hand blender and blend for a smooth sauce. If you like a chunky sauce, leave it as is.

PH oven to 160 degrees C

Smear 1/2 cup of red pepper sauce over the pizza base; cover the entire pizza with mozzarella slices. Place the fresh basil over mozzarella and bake for about 15 minutes / till the cheese is melted and bubbling

For variations, you can add in mushrooms to the sauce and cook. You can also grate some parmesan over the mozzarella.

NOTE : The remaining sauce can be stores in and airtight container for 3-4 days in a refrigerator.
