Vankaya Pachadi / Andhra style Aubergine Dip

There are people who hate eggplant / aubergine / brinjal… But those same people eat this pachadi and say it is yumm! This is a side dish that can be eaten with a roti, rice, dosa, idli… Anything.. Put some yoghurt in it and ear just like that and it does taste good… It goes very well as a sandwich spread too… Amazing with pita bread.. He is an all-rounder. Very simple to make and makes a quick weekday dinner dip. I was one of the people who never actually liked this pachadi though I used to eat brinjal in all other forms.

This is my Mum’s recipe… she is like a recipe library… The minute you call and ask her for a recipe… She has them on her fingertips… And she rattles away on the phone… no exact measurements… little of this and little of that is all she says… You are left to imagine what that little means!

Here is the recipe.

  1. 2 large purple aubergines
  2. 1 tsp. olive oil
  3. 2 TBSP vegetable oil
  4. 5 dry red chilies
  5. 1 tsp. mustard seeds
  6. ½ tsp. cumin seeds
  7. ¼ tsp. urad dal
  8. ¼ tsp. chana dal
  9. 8 methi seeds
  10. 10 curry leaves
  11. 1/8 tsp. powdered hing / asafetida
  12. Salt to taste
  13. Lemon sized ball of tamarind soaked in ¼ cup of water for 15 minutes. Strain and keep aside.

Wash and dry the aubergines, place them in a microwave safe baking plate. Smear the olive oil all over the aubergines and microwave them at 900 w power for 6 minutes. Remove from microwave and let them cool. Once cooled, cut off the stems and peel them. Put them in a bowl and mash to a smooth paste. Add in the salt and tamarind juice, mix well and keep aside.

In a small pan, heat 2 TBSP vegetable oil and add in mustard, cumin, methi, urad dal, chana dal, red chilies, hing and curry leaves. Once the mustard seeds start spluttering, take off heat and let them cool. Once cooled process in a mixie to a fine powder and mix it into the aubergines.

Serve with hot rice and ghee!
