Panasakaya Kura / Raw Jackfruit Fry / Kathal Fry

The other day I went to my organic store .. I bought the usual veggies for my son and I saw these really cute raw jackfruit. I called mum and made the purchase.

One of my colleagues was also talking recently about this yummy ‘Kathal ki sabzi’ and I so wanted to try it !

My dad’s cousin makes this yummy jackfruit fry.. I called him got the recipe and made it ! and yeah !! just super duper delicious !!

So, Thank you Pedda Pednanna garu for the recipe !!

1. Raw jackfruit 1/2 kilo chopped pieces ( Please make sure, you get it peeled and cut in the market itself )*

2. 1 cup water

3. 1 small peice tamarind

4. 2 medium onions , finely chopped

5. 2 tsp ginger garlic paste

6. 1/2 tsp turmeric

7. 1 tsp chilli powder

8. 1 tsp coriander powder

9. Salt to taste

10. 11 TBSP oil

11. A sprig of curry leaves


Add the jackfruit pieces, water, turmeric, salt and tamarind into a pressure cooker and cook for 2 whistles on medium flame. Once the cooker cools down, heat 5 TBSP oil in a heavy bottom pan and fry the jackfruit pieces till they turn golden brown and keep aside. ( save the water in which you cooked the jackfruit pieces )


In the same pan, heat 6 TBSP oil and fry the onions till they turn translucent. Now add the ginger garlic paste and fry till the ginger garlic smell fragrant, add chilli and coriander powders, curry leaves and fry for a couple of minutes. Add the fried jackfruit pieces and stir well. Add in the saved water and stir well. Check for seasoning and add salt if required.


Tastes best when served hot with rice or chapati.

  1. You brought back so many memories…. When we got raw jackfruit, my grandmother would retire to the backyard loaded with lots of old cotton cloth and oil to chop it up…. All grandchildren were told to stay away, lest we smother ourselves in the sticky jackfruit goo….

    But the results were simply awesome!
