Guthi vankaya is one of my favourite andhra dishes, it want a regular in my house, my mum never made it neither did my grandmother.
My mum in law makes an excellent guthi vankaya! She make it with a peanut based gravy and we all love it, we hog like bowls and bowls of rice with this gravy!
There are various versions of this dish, some made with onion based gravy, some with peanut base, some with coconut base. Some make an amazing roasted guthi vankaya stuffed with a spice powder.
This has been on my bucket list to try from a very long time !
This is another one of too many recipes from Ravi, this is not a very bachelor friendly recipes 😛 as it has way too many ingredients to fathom.
small tender Brinjals : 1/4 kilo,wash, keep the stem intact and make a plus slit .
Ingredients : Roast in 1 tsp oil and make a powder
- Peanuts – 2 TBSP
- sesame – 2 TBSP
- Urad dal – 2 TBSP
- Hing – 1/2 tsp
- coriander seeds – 2 TBSP
- Jeera – 1 TBSP
- fresh coconut – 2 TBSP
- Methi seeds – 1 tsp
- tamarind – small marble size
- 7-8 cloves of garlic
- Dry red chilli – 10-12
- salt to taste
- Curry leaves – 1 sprig
- Fresh coriander – 1/4 cup
- Mustard seeds – 1/2 tsp
- Cumin seeds – 1/2 tsp
- Hing – a pinch
- curry leaves
Stuff the powdered ingredients into the prepared brinjals and keep aside.
Heat oil in a heavy bottom wide pan and add the tempering ingredients. place the brinjals in the pan and roast on each side for a couple of minutes. Turn carefully so that the stuffing doesn’t spill.
Cover and cook on very low flame till the brinjals are cooked through.
