Hyderabadi biryani is quite the rage. I don’t know if anyone dislikes this dish. Everyone has their own version of the biryani. I recently saw this recipe, which was quite simple and the results were ahmazing!! This is like, mix , cook and layer! that’s all!
5 cups basmati rice, soaked for about 1 hour ( drain and keep aside )
- Chicken 1.5 Kilos
- Ginger garlic paste – 6 TBSP
- Green Chilli Paste – 6 TBSP
- Kashmiri red chilli powder – 3 TBSP
- Chopped mint and coriander – 1/2 cup tightly packed
- Fried onions – 1 cup ( Divided )
- curd – 1/2 cup
- oil – 1/4 cup
- Make a coarse powder of
- 4 cardamom
- 4 cloves
- 1 inch cinnamon
- 1 TBSP shahi jeera
- 2 tsp garam masala
- salt to taste
In a large wide vessel, mix ingredients 1 through 11, keep it on the stove, cover and cook for about 15-20 minutes on medium heat . The chicken must be almost done.
Meanwhile, bring a large pot of water to boil, add few drops of oil, little salt, 1 cardamom pod. Once the water starts boiling, drain and add the basmati rice. Boil for about 8-10 minutes ( or till 75% done ) , spread the drained basmati rice over the chicken mixture. ( Do not mix ). sprinkle some fried onions, corainder and mint. Cover and cook on very low heat for about 8-10 minutes ( placing a weight on the lid like a mortar and pestle on the lid would help in retaining the steam) . Fluff with a fork and serve.
