I had got few bananas and had forgotten all about them! I had no heart to throw them out. Hence this cake! This is a rich moist cake , best for a snack or with tea!
1. 1 3/4 cup flour
2. 1 1/2 cups caster sugar ( Reduce if the bananas are very sweet )
3. 3/4 cup cocoa powder
4. 1.5 tsp baking powder
5. 1.5 tsp baking soda
6. 3 small ripe bananas mashed ( I used yelakki bananas) If using the large variety, use 2 bananas
7. pinch of salt
8. 1/2 cup milk
9. 1/4 cup oil
10. 1 cup weak coffee decoction ( 2 tsp instant coffee dissolved in 1 cup of hot water and let rest till warm)
11. 2 eggs
12. 2 tsp vanilla
In a large mixing bowl, add ingredients 1-5 and and whisk till combined. Alternatively sieve these ingredients.
In a separate bowl, whisk together the ingredients 6-12. make a well in the dry ingredients add the egg and banana mixture to the dry ingredients. Fold in slowly with a spatula till all the ingredients are combined well. Grease a loaf tin and pour the batter. Preheat oven to 180 degrees Celsius and bake the cake till a tooth pick inserted in the center comes out clean or for 30-40 minutes.
